HoneyRun winemakers John and Amy Hasle have been crafting wines made without added preservatives, like sulfites and sorbates, since 1992.

Sulfites are an easy way most wineries kill wild yeasts on fruit. The sulfites also help to keep the wine from acquiring unwanted caramel flavors, or browning (as sliced apples do).

Useful as sulfites are, many people experience headaches or strong allergic reactions to even small amounts of sulfited wine. This is particularly true of white wine, which tends to have two to three times the sulfites of a regular wine. (Ever heard of a "champagne headache"?)

HoneyRun has been in the natural foods industry since 1982. We make our honey wines with extra care, not preservatives, so you can enjoy a more natural wine. When we have our wine lab-tested, the results are usually 0 - 2 parts per million sulfites detected. (Compare that to the standard 90 - 120 parts per million added to most finished wine. 350 ppm is the legal limit.)

Kosher OU Supervision

HoneyRun Honeywine is supervised by the Orthodox Union (OU). Our wine is Kosher Pareve, but not Kosher for Passover. OU recently bought Kosher Overseers of America, our previous Kosher supervision. Until our labels sell through, they will have the half moon K symbol of Kosher Overseers, though our Letter Of Certificate is from OU.

Each State has different regulations for wine shipments. Some State licensing is prohibitively expensive, so we can only ship to a number of States directly. Fortunately, there are Online Retailers in 32 more States that can ship our wine. Elderberries are a small, light to dark blue fruit that grow in flat clusters. The round elderbush, which can grow to twenty feet, is surprisingly common along creeks, riverbeds, and roadsides across North America. Traditional elderberry wine is very popular along the East Coast and the Pacific North West, where the berries grow easily and in abundance.

Both the elderflower and elderberry are used for their nutritional, medicinal, and tasty qualities. The flower can be made into teas, tisanes (herbal tea without tea leaves), and cordial. There is even an elderflower syrup that has been used to make vegan marshmallows. The berry makes a delicious juice (found to be useful in helping relieve flu-like symptoms), jam, and of course, wine.

Many HoneyRun Elderberry honey wine fans will fondly remember parents or grandparents making elderberry wine. HoneyRun hopes to renew the thrill of family memories, and help make new ones.

Mead is a wine made by fermenting honey, without the use of fruit and without grapes. Honey Run Dry Mead is a true honey wine. "Melomels" are specifically wines created by fermenting fruit and honey together. Honey Run's Blackberry, Cranberry, Cherry, and Elderberry varieties are melomels. Some melomels have specific names: Apple honey wine is called "cyser," grape honey wine is called "pyment," a spiced mead is called "metheglyn."

The craft of creating mead is ancient. It was probably the first fermented beverage discovered by humans. Before recorded history, honey collectors would smash honey comb and gather the honey that dripped out. They would then put the comb into a vat of water to dissolve the rest of the honey. Some lucky soul didn't drink their sweetened water before it fermented into wine. And when they did, everyone else must have noticed how silly they became - Voila, honeywine.
