Recipe: Cran Rosemary Chicken
This recipe was given to me by the illustrious and iconoclastic beauty, Mo. This easy-to-prepare dish is known around the Berkeley area as "Mo's other White meat". I don't know what exactly the first white meat refers to. I am afraid to ask.
Ingredients: (Easy, only five)
Chicken Breast 2-3Lbs. HoneyRun Cranberry Honeywine. One 6" sprig Rosemary (2 tps. dried) Six Pepper Corns, salt.
Chop Rosemary and grind pepper corns into tiny pieces. Put meat and spices into a sturdy ziplock bag. Add enough Cranberry wine to cover. Let marinate for 30-35 minutes. Do not over-marinate. Bake until meat is 155 degrees. Broil for a few minutes to brown the top. Serve with red potaotes, or baked acorn squash with honey, butter or maple syrup glaze.
This is also very tasty for other mild white meat.
